Commercial Floor Care for Northern and Central California

Several brands, one building, constant traffic

A ghost kitchen runs several restaurants from a single building. Each bay cooks for its own delivery brands, orders move to a shared packing and dispatch area, and drivers stream through a pickup lobby from lunch until late at night. The floors in that building see grease from a dozen cook lines and foot traffic from hundreds of pickups a day.

Solum Cleaning keeps those floors under control. We degrease and scrub kitchen bay floors, clean around drains, scrub packing and corridor floors and maintain the lobby floor so the one space the public sees looks well kept.

Delivery-only kitchens in the Bay Area

San Francisco and the wider Bay Area have many delivery-only kitchens built for app orders rather than dine-in guests.

Facilities like these often occupy converted warehouses, so the floors are a mix: quarry tile or urethane cement in the kitchen bays, sealed concrete in corridors and storage, and a resilient or tile floor in the lobby.

Kitchen bays and cold storage

Each bay is a compact, high-output kitchen. The floor in front of fryers and ranges is degreased and machine-scrubbed, with the dirty solution recovered by wet vacuum, and the area under prep tables and around equipment legs gets detail work so grease does not build up at the edges. Our kitchen floor degreasing guide explains the method.

Walk-in coolers and freezers carry floor traffic in and out all shift. Their floors are scrubbed with the door managed so the box holds temperature, and the threshold where kitchen soil tracks in is given extra attention.

Drains, packing areas and corridors

Floor drains in each bay collect food solids and grease fast. Grates are lifted, the surrounding floor is scrubbed and the area is rinsed so water drains properly and odor stays down.

Packing and dispatch areas see spilled sauce, dropped bags and constant footsteps. Sealed concrete or tile there is auto-scrubbed so the floor stays clean around the shelves where food is bagged and sealed. Corridors between bays get the same treatment, since they carry soil from every kitchen to every other part of the building.

The pickup lobby and driver shelves

The driver pickup lobby is the front door for every brand in the building. Its floor takes grit from the street, rain on wet days and drips from bags and drinks. We scrub and burnish resilient floors, deep clean tile and grout and keep entrance mats and the floor under them clean, so drivers and walk-in customers see a lobby that matches the food.

The floor under pickup shelves, where bags are set down and picked up, is detailed on every visit, because small spills there spread quickly through the lobby.

Overnight visits and quick turnarounds

Delivery kitchens peak twice a day and keep going late, so floor work happens overnight or in the short window before morning prep. Bays are worked one at a time, each handed back dry before its brand’s next shift, and the lobby is done last after the final driver leaves.

Operators with a commissary or incubator side can pair this program with our commissary and shared kitchen floor care, written for tenant prep lines and dish areas.

What sets the price

Price follows the number of bays, the floor surface in each, the grease load on the cook lines, the number of drains, the size of the packing and lobby areas and how often each is serviced. Crews are background-checked, a supervisor inspects every finished area, and the facility manager receives a certificate of insurance for the vendor file.

A few useful answers

Common questions

Can one kitchen bay be cleaned while others keep cooking?

Yes. Bays are worked one at a time, so the rest of the building stays in service while each bay is cleaned and handed back.

What floors are common in delivery-only kitchens?

Quarry tile or urethane cement in the cook bays, sealed concrete in corridors and storage and a resilient or tile floor in the pickup lobby.

Is the driver pickup lobby included?

Yes. The lobby floor, the area under pickup shelves and the entrance are scrubbed and maintained on each visit.

When do you work in a ghost kitchen?

Most visits run overnight or before morning prep, after the last delivery orders have left the building.
